Made some adjustments to the gumbo recipe I posted before:
Instead of green untitled squash, I used:
-yellow squash
-sweet corn kernels
-red onion
-green bell pepper
-dandelion greens (like Rachel Ray's original recipe!)
-diced tomatoes (instead of crushed)
-celery
Needless to say, my gumbo was more veggie friendly. Yay, here's a pic.
didn't get the rice to scoop as nicely as last time, but whatever, still yummy, and finally tasted by Bob who loved it!
